The Garlicky Crispy Pata is the dish to have here. Crunchy on the outside and juicy on the inside, I was in seventh heaven after the first bite. The menu in the restaurant describes this main course as being “Deep-fried, crispy pork hock topped with garlic bits and chili”. I also ordered a side of garlic rice and vegetables that made a good addition to the meal.

I was told that the dish gets its crispy exterior from the way it is prepared. A whole pork leg is simmered in spices until fork-tender, refrigerated overnight to dry and then deep-fried until the meat is moist and succulent and the skin golden and crisp. And I must say the result was absolutely delicious.
Great service, great food and not to be missed when in Manila.

This pork looks absolutely amazing! Manila is a little bit far away but I will look up a recipe and give it a go!
