I first heard about “Saleeg” many years ago and I’ve never really looked into it since then. It finally popped up the other day when I was looking for local cuisines in the Western Region and I knew exactly what I had to do.

Saleeg (Arabic: سليق Hejazi pronunciation: [saˈliːg]) is a white-rice dish, cooked in broth, milk and butter that originates in Hejaz region in the west of Saudi Arabia, where it is commonly regarded as a national dish of the region.

The flavours are subtle, creamy thanks to the milk & butter. The spicy tomato sauce is a good addition to the rice but the chicken cooked in stock does the trick. A must have if you are in the WR.
